Vegetable Biryani with Vedanta Whole Spices

Ingredients:

  • Vedanta Basmati Rice – 1.5 cups
  • Mixed vegetables – 2 cups
  • Onion – 1 large, thinly sliced
  • Yogurt – ½ cup
  • Ginger-garlic paste – 1 tsp
  • Red chili powder – ½ tsp
  • Turmeric – ½ tsp
  • Garam masala – ½ tsp
  • Whole spices: bay leaf, cardamom, cinnamon, cloves – 1 each
  • Ghee & oil – 2 tbsp
  • Salt – to taste

Method:

  1. Fry onions in ghee/oil until golden. Remove half for garnish.
  2. Sauté ginger-garlic, spices, and vegetables in remaining oil.
  3. Mix yogurt and cooked veggies; keep aside.
  4. Par-cook rice with salt and whole spices.
  5. Layer rice and veggie mixture in a heavy-bottomed pot, top with fried onions.
  6. Cover and cook on low flame 10–15 mins (dum method).

Serve hot with raita.
