Basmati Rice & Saffron Pulao with Nuts and Raisins

Ingredients:

  • Vedanta Basmati Rice – 1 cup
  • Saffron strands – a few
  • Ghee – 2 tbsp
  • Cashews & almonds – 2 tbsp each
  • Raisins – 2 tbsp
  • Cardamom – 2 pods
  • Cloves – 2–3
  • Cinnamon stick – 1
  • Bay leaf – 1
  • Salt – to taste
  • Water – 2 cups

Method:

  1. Soak saffron in 2 tbsp warm water.
  2. Heat ghee, add whole spices, sauté 30 secs.
  3. Fry nuts and raisins lightly.
  4. Add washed rice, sauté gently, add water, saffron, and salt.
  5. Cook covered on low heat until rice is fluffy.
  6. Serve as a festive main or with dal makhani.
