Ingredients:
- Vedanta Basmati Rice – 1.5 cups
- Mixed vegetables – 2 cups
- Onion – 1 large, thinly sliced
- Yogurt – ½ cup
- Ginger-garlic paste – 1 tsp
- Red chili powder – ½ tsp
- Turmeric – ½ tsp
- Garam masala – ½ tsp
- Whole spices: bay leaf, cardamom, cinnamon, cloves – 1 each
- Ghee & oil – 2 tbsp
- Salt – to taste
Method:
- Fry onions in ghee/oil until golden. Remove half for garnish.
- Sauté ginger-garlic, spices, and vegetables in remaining oil.
- Mix yogurt and cooked veggies; keep aside.
- Par-cook rice with salt and whole spices.
- Layer rice and veggie mixture in a heavy-bottomed pot, top with fried onions.
- Cover and cook on low flame 10–15 mins (dum method).
Serve hot with raita.
